

Pomelo Brûlée
Pomelo Brûlée is an anaerobic washed Caturra microlot from Finca El Placer in San Agustin, Huila, grown by Daniel Mauricio Bolanos Zuniga. The fermentation process is deliberate and hands-on: cherries go through a two-stage anaerobic rest before being pulped, re-fermented, washed, and dried on raised or parabolic beds for up to 25 days. The result is layered and refined. Bright pomelo up front, settling into salted caramel and vanilla custard. Clean, structured, and surprisingly approachable for a processed coffee.
