from young Colombian producers learning to
process their own coffee. Every few months,
growers across the Andes, Sonsón, and Armenia
run 20-30 kilo batches as naturals or
extended ferments, cup the results together,
and scale the most promising into stand-alone
releases. Sebastián Ramírez's Red Fruit
co-ferment anchors the profile. The result is
bright and a little wild, with red fruit,
cocoa, and a candy-store sweetness.
