Demystifying Anaerobic Coffee Processing

Imagine coffee cherries embarking on a spa retreat! In anaerobic processing, these cherries are placed in sealed, oxygen-free tanks—think of them as exclusive saunas. Inside these tanks, equipped with one-way valves (similar to those on our retail bags), natural fermentation occurs without oxygen. This careful control over variables like temperature, pH, and time allows for the development of unique flavors, often reminiscent of wine or tropical fruits. It's a delicate dance; precise monitoring is essential, as even minor deviations can lead to unexpected results.
